Homemade Pickled Beets: Sweet, Tangy, and Bursting with Flavor

Ingredients

  • 6 medium beets, washed and trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt

Optional spices for extra flavor:

  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon whole black peppercorns
  • 1 cinnamon stick

Instructions

1. Cook the Beets

Place the beets in a large pot and cover them with water. Bring to a boil, then reduce to a simmer and cook until fork-tender, about 30–40 minutes depending on their size.
