Healthy Pickled Beets Recipe

Prep Time:

10 minutes (plus cooking time for beets)Fruits & Vegetables

Chill time: at least 2–4 hours (better overnight)

Ingredients:

8 medium beets, trimmed and scrubbed

1/2 cup apple cider vinegar (or red wine vinegar)

1/2 cup water

1–2 tbsp honey or maple syrup (adjust to taste)

1/2 tsp salt

1/2 tsp black peppercornsCondiments & Dressings

1/2 tsp mustard seeds (optional)

2 cloves garlic, peeled and smashed (optional)

1 small bay leaf (optional)
