Drain and allow them to cool enough to handle.
2. Peel and Slice
Once cooled, rub off the skins with your hands or a paper towel—they should slip off easily. Slice the beets into rounds, wedges, or cubes, depending on your preference.
3. Make the Pickling Brine
In a saucepan, combine the vinegar, water, sugar, salt, and any optional spices you’re using.
Bring the mixture to a gentle boil, stirring occasionally until the sugar has completely dissolved and the brine is fragrant.
4. Fill the Jars
Pack the sliced beets into clean, sterilized mason jars.
Carefully pour the hot brine over the beets, ensuring they are fully covered. Leave about 1/2 inch of space at the top of each jar.
5. Seal and Refrigerate
Secure the lids and let the jars cool to room temperature.
